Dry Sparkling
While most of the 2014 vintage was disgorged and released in 2017 at three years of age; in the tradition of the great Champagne houses, we left a mere 120 bottles of the inaugural 2014 vintage in the cellar, allowing them to continue to mature on lees for 10 years prior to disgorgement. These few precious bottles express their age as they express their origin, exemplifying a magical part of winemaking to be able to take sparkling wine to this age. During the 10 years that this wine has been quietly maturing, the continued contact with the yeast in the bottle contributed sweet, toasty aromas and flavours and a creamy mouthfeel; softening the apparent acidity and enriching the palate. Disgorged in June 2024 with zero dosage, this wine is completely dry which is extremely rare in Australian sparkling wine, but the creamy mouthfeel and complex flavours ensure a decadently rich palate. Even after 10 years this wine retains the essence of great Riesling, with driving natural acidity and honeyed citrus aromas, perfectly complemented by the yeasty undertones of autolysis as notes of fresh croissant, Buttersnap biscuits and roasted almonds. With only 120 bottles produced (and far fewer available by the time the Freak has partaken of his share), this rare and exceptional expression of Riesling is one for the true connoisseur; an exemplary example of Australian Riesling and Sparkling winemaking at its absolute pinnacle.
